The CHEFS CHOICE 120 electric knife sharpener is magnificent. I used to take 20 to 30 minutes to make a knife sharp enough to be useable. Never have I been able to get a perfect cutting edge despite spending many hundreds of dollars in the past on many different types of sharpening systems. With Chefs Choice 120 , I was able to get an almost perfect sharp knife in less than 3 minutes. and it was sharp enough to shave with. Now, with a little practice ( 2 knives) I can turn a very blunt knife into a razor sharp edge in less than a minute. My knives are now sharp enough to shave with and can easily slice through a sheet of paper. Razor sharp and the best they have ever been. Perfect knives, no effort and in less than a minute each.
